Executive Summary:

This second edition of the Tanzania eCookBook focuses on energy-efficient cooking, specifically the opportunity for cooking with electric appliances. In achieving the goal for the transition from inefficient use of biomass to clean cooking solutions, we have introduced highly efficient electric cooking appliances, specifically the Electric Pressure Cooker (EPC) as the appropriate ultimate clean cooking solution for the Tanzanian context.

This edition centers only on electricity appliances, mainly the EPC, enlightening its advantages, handling, troubleshooting, simple maintenance and how it can be used and adopted in cooking many of the Tanzanian staple foods.

The book also provides evidence on how cooking with efficient electric appliances is possible, cost efficient, time saving and clean. It goes further on how one can save even more energy and money through better kitchen management practices. The twin challenges of lack of awareness and lack of availability are addressed in the final section of the book.
